The challenge presented this month by @girlcarnivore was to incorporate the following ingredients:
Matt made a ground chuck patty basted with Guinness barbecue sauce. He topped it with slow-cooked Guinness corned beef, Kerrygold Dubliner Cheese (a house favorite!), cabbage slaw, housemade Guinness aioli, atop seasoned French fries on an onion bun.
Since we met a hundred years ago, Guinness is a staple in our house. We even have been to the Guinness Storehouse in Dublin for a tour and tasting of our favorite beer.
This was a fun, tasty challenge to work on!

Matt did it up right, and two of our guests said it was the best burger they'd had yet!
Below is the burger -- Finely-chopped short rib, marinated in bulgolgi sauce with lemongrass, grilled and topped with a housemade fennel and cabbage kimchi and gochujang mayo.
The challenge ingredients for this month? @GirlCarnivore put us to the test:
Matt's creation? Double pork bacon cheeseburger: one seasoned pork patty, one homemade chorizo patty with melted red hots in the mix, peppered bacon, cotija cheese and avocado-mango salsa. Yep, another keeper.
Food blogger Kita Roberts (you may know her better as @girlcarnivore), threw down the burger gauntlet and created a monthly burger challenge on Facebook in 2018.
We love a good challenge.
We also love a good burger.
The skinny? Each month Kita picks four ingredients that have to be included in the burger style creation in some fashion --- from red hot candies, fennel, cranberry sauce, marshmallow --- the options seem endless.
Each month our friends and family have been there for us as Matt pulls these miraculous burgers out of his creative mind --- and so far, not one has been kicked out of possible future re-appearances on the family menu!
